Taco Salad


My mom is Wonder Woman.  Growing up I remember her always being asked, “How do you do it with all of those kids?”  That is because she has six!  When the youngest was born the ages ranged from newborn to 14.  We were bathed daily, always on time to wherever we went, and surprisingly well behaved.

On top of that, she worked full time and commuted an hour each way.  Her day started before 6 and ended after making dinner, bathing children, putting them to bed, doing laundry, and prepping lunches sometime after 10.  To say she had some major organizing and planning skills would be an understatement.

With so much on her plate, her meals were not fancy.  She did not try new meals very often, but she made delicious and practical meals for a big family.  One of my favorite meals was her Taco Salad.  It is delicious, healthy, and remains a staple in my home (ask Keith, it’s actually his favorite!)


Ingredients:

  • favorite lettuce (growing up my mom used iceberg, but I use a blend now)
  • kidney beans- drained and rinsed
  • cheddar cheese
  • ground turkey or beef seasoned with taco seasoning
  • Catalina Dressing
  • tortilla chips
  • toppings like: sliced olives, avocado, onions, cilantro

Put everything in a big bowl and toss!  Then pile your bowls up high 🙂
